Bulgogi is essentially made of prime cuts of beef: usually the tenderloin or sirloin. These cuts are chosen due to their incredible tenderness and easily cuttable texture, so they can be thinly sliced. Once sliced, the beef is then marinated in a traditional mixture.
This is usually a sauce made of soy sauce, sugar, garlic, sesame oil, and pepper.
The meat is usually left to soak in the mixture for around an hour, but some chefs might leave the meat overnight for an intense flavor.
Once marinated, bulgogi is usually pan-fried on a bbq grill but can also be used in a stir-fry when cooking at home.
Galbi – otherwise commonly known as ‘grilled ribs’ – is another incredibly popular style of Korean cuisine.
This dish is traditionally made with beef short ribs, and is usually served raw to diners for them to cook themselves on the Korean BBQ grill.
Most galbi is marinated in a sweet and savory sauce consisting of soy sauce, garlic, and sugar.
In some Korean BBQ restaurants, you may also find un-marinated galbi, although this is less common (and less tasty, personally).

Chadolbegi is so thin that it cooks almost instantly when placed on a hot grill – so make sure you don’t overcook it!
Once cooked, it is often served with a dipping sauce of sesame oil, salt, and pepper. It can be cooked on both an electric grill and a charcoal grill, but I’d always recommend charcoal if you’re after intense flavor.
Samgyeopsal is, similarly to chadolbegi, a traditionally un-marinated style of Korean BBQ; however, samgyeopsal is usually made from thick, fatty slices of pork belly.
Samgyeopsal is succulent and juicy when cooked well – which is why I love it!
This style of Korean meat can be cooked on both electric and charcoal grills and is also served with a traditional dipping sauce consisting of sesame oil, salt, and pepper.
One of the most expensive types of Korean barbecue grill is deungshim, a style of dish made from sirloin steak.
This cut of meat has incredibly even fat distribution, making for a dish that melts in the mouth and is also full of flavor (it’s making us hungry too).
A good sirloin cut has lots of flavors naturally, so this dish is usually cut thinly, grilled on the BBQ grill, and served with a simple marinade of sesame oil to bring the meat to life.
