30-Minute Mediterranean Lemon-Herb Chicken Bake

The vibrancy of the Mediterranean diet comes to life in this speedy, fuss-free recipe, brimming with fresh vegetables, lean protein, and bright, citrusy flavors. In just half an hour, you’ll have a comforting meal that tastes like a mini getaway to sunny shores.

  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Zest and juice of 1 lemon
  • 1 cup cherry tomatoes, halved
  • 1 cup sliced zucchini
  • 1 small red onion, cut into wedges
  • Salt and black pepper, to taste

Instructions

Begin by preheating your oven to 400°F (200°C). Arranging everything on a sheet pan or in a baking dish helps keep cooking quick and cleanup even quicker.

Pat the chicken dry and place it in the pan. In a small bowl, whisk together the olive oil, garlic, oregano, basil, lemon zest, and half the lemon juice. Season with a generous pinch of salt and pepper, then drizzle this aromatic mixture over the chicken.
