  • 1 cup roasted red peppers (jarred or homemade)
  • 8 ounces feta cheese, crumbled
  • 1 clove garlic, finely chopped
  • ¼ cup Greek yogurt
  • 1 tablespoon extra-virgin olive oil
  • Juice of ½ lemon
  • Pinch of red pepper flakes (optional, for heat)
  • Salt and black pepper to taste

Instructions

Begin by draining the roasted red peppers if using jarred ones. Pat them dry with a clean kitchen towel or paper towel to remove excess moisture, then roughly chop. Set them aside while you gather the rest of your ingredients.

Combine the roasted peppers, feta cheese, garlic, Greek yogurt, and olive oil in a blender or food processor. Add a squeeze of fresh lemon juice for brightness, and if you like a bit of a kick, sprinkle in some red pepper flakes. Blend until the dip reaches your preferred texture—smooth or a tad chunky, whatever you like.

Taste and adjust the seasoning with salt and pepper. Depending on the saltiness of your feta, you may find you don’t need much salt at all. Spoon the dip into a serving bowl and finish with a drizzle of olive oil or a sprinkling of fresh herbs like oregano or basil.

This Roasted Red Pepper Feta Dip brings the sunny flavors of the Mediterranean right to your table. It’s perfect for entertaining friends, brightening up a potluck, or simply enjoying as a light and healthy snack. If you want to switch it up, try adding roasted eggplant, swapping almonds for extra creaminess, or stirring in fresh herbs like dill. No matter how you serve it, this dip is sure to bring a burst of color and tang to any appetizer spread!
