Looking for a simple dish that unites creamy avocado with bold Mediterranean flavors? This recipe balances bright lemon, aromatic herbs, and savory chickpeas for a deliciously fresh meal. It’s perfect for a light lunch, snack, or even a fun appetizer at your next gathering.

  • 2 large ripe avocados
  • 1 cup cooked chickpeas (rinsed and drained)
  • 1/2 cup diced tomato
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon ground cumin
  • Pinch of salt and freshly cracked black pepper
  • A handful of chopped fresh parsley or basil (optional, for garnish)

Instructions

Start by slicing your avocados in half lengthwise. Carefully remove the pits, then set the halves aside on a serving platter. In a small bowl, combine the chickpeas with the diced tomato, olive oil, lemon juice, oregano, and ground cumin. Stir well so that the chickpeas are coated in all those zingy spices.
