  • 1 tablespoon olive oil (or your favorite cooking oil)
  • 2 garlic cloves, minced
  • 1 cup chopped bell peppers (any colors you love)
  • 1 cup chopped zucchini

Instructions

Begin by warming the olive oil in a large skillet set over medium heat. Once the oil shimmers, add the minced garlic and give it a quick stir to release its aroma. Toss in the chopped bell peppers and zucchini, and stir-fry for about 3 to 4 minutes. You’ll know it’s time to move on when the veggies begin to soften and show a lovely hint of golden color.

Next, add the cauliflower rice to the skillet. Stir everything together so the flavors meld nicely. Sprinkle in the chili powder, dried oregano, salt, and black pepper.
