Spiced Sweet Potato Lentil Bowls: A High-Fiber Hero

Bursting with colorful veggies, hearty lentils, and warm spices, this dish has all the makings of a comforting, weeknight favorite—without skimping on nutrition.

  • 1 cup dried green or brown lentils, rinsed
  • 2 cups vegetable broth
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder (optional for heat)
  • Salt and pepper to taste
  • 1 cup chopped kale or spinach (optional for extra greens)

Instructions

Start by cooking the lentils. In a medium saucepan, combine the rinsed lentils and vegetable broth. Bring to a gentle boil, then reduce the heat, cover, and let them simmer for 15–20 minutes, or until they are tender but not mushy. Drain away any excess liquid if needed.

Meanwhile, in a large skillet, warm the olive oil over medium heat. Add the chopped red onion, and sauté until it becomes translucent and fragrant, about 5 minutes. Stir in the minced garlic, and cook for another minute, keeping an eye on it so it doesn’t burn.

Next, add the diced sweet potatoes, along with the cumin, smoked paprika, chili powder (if using), salt, and pepper. Toss everything together to coat the potatoes in the spices. Cook, stirring occasionally, for about 10 minutes, or until your sweet potatoes begin to soften and develop a slight caramelization. If you want some greens, stir in the chopped kale or spinach at this point to let it wilt.

Finally, fold in the cooked lentils. Taste and adjust your seasonings—perhaps a touch more salt, pepper, or a sprinkle of additional spices. Continue cooking for another 2–3 minutes just to allow everything to mingle and warm through.

To serve, spoon the mixture into individual bowls. Top your warm bowl of goodness with a handful of chopped cilantro, a squeeze of bright lemon or lime juice, or a creamy dollop of Greek yogurt, if you like.
