  • 1 tablespoon olive oil
  • ½ medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup dried green or brown lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika

Instructions

Warm the olive oil in a large pot over medium heat. Sauté the onion and garlic for a couple of minutes, just until they turn translucent and fragrant.

Next, stir in the sliced carrots and celery. Allow them to soften slightly for about 4–5 minutes, gently stirring so they cook evenly.

Add the rinsed lentils, diced tomatoes, vegetable broth, and all the dried spices (thyme, oregano, and smoked paprika). Stir everything together, then bring the stew to a gentle boil.

Reduce the heat to low. Cover the pot and let the stew simmer for about 20–25 minutes, or until the lentils are tender. If it thickens too much, add a little extra broth or water.
