  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 cup dried green or brown lentils, rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 cup chopped spinach or kale (optional)

Instructions

In a large pot, warm the olive oil over medium heat. Add the chopped onion and minced garlic, stirring occasionally until they turn fragrant and slightly translucent—about three to five minutes. Toss in the sliced carrots and celery, allowing them to soften for another few minutes.

Next, stir in the rinsed lentils, diced tomatoes (with their juices), and vegetable broth. Season with thyme, oregano, salt, and black pepper. Increase the heat to bring everything to a gentle boil, then reduce the heat to a simmer. Cover the pot and let the soup cook for approximately 20 to 25 minutes, or until the lentils are tender.
