  • 1 pound lean ground beef
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced into strips
  • 1 cup diced tomatoes (fresh or canned)
  • ½ cup pitted green or kalamata olives, halved
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • ½ cup crumbled feta cheese
  • Fresh basil or parsley for garnish

Instructions

Begin by warming the olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté until it becomes translucent, about 3 to 4 minutes. Stir in the minced garlic, allowing it to become fragrant—be careful not to let it brown.

Next, crumble the ground beef into the skillet, using a wooden spoon to break it up. Season lightly with salt and pepper. Cook until the beef is nicely browned and no pink remains. Drain off any excess fat, if needed.
