Instructions

Stir to coat the onions evenly, then cover and set your slow cooker to low for about 8 hours, giving the onions plenty of time to turn soft and gorgeously golden.
After the onions have caramelized, pour in the broth and wine (if using). Toss in the thyme, bay leaf, and a sprinkle of black pepper. Cover and continue cooking on low for another 2–3 hours to deepen the flavors. Taste as you go, adjusting the seasonings if needed.
