If you’re looking for a comforting, hands-off vegetarian dish, look no further than this aromatic tagine loaded with hearty chickpeas, vegetables, and warm spices. It’s a breeze to toss everything in the slow cooker and let the flavors slowly meld together.

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and sliced
  • 1 red bell pepper, chopped
  • 1 cup cubed butternut squash

To begin, lightly coat your slow cooker with olive oil (or simply drizzle the tablespoon of oil in). Place the chopped onion, garlic, carrots, bell pepper, and butternut squash in first, creating a hearty base for your tagine. Next, add the chickpeas and diced tomatoes, stirring gently to combine.

If you’re short on time, crank the heat up to high and check for doneness around the 3-hour mark, adjusting seasoning as needed. Serve in bowls with fresh cilantro or parsley on top for a bright pop of color.
