This Tex-Mex-inspired 7-layer dinner is an easy-to-assemble feast bursting with savory goodness.   • 1 pound ground beef (or turkey), browned and drained
  • 1 medium onion, finely chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

  • 1 cup frozen or canned corn kernels, drained

Instructions

Prepare the seasoned meat first. In a large skillet over medium-high heat, sauté the chopped onion until soft, about five minutes. Add the ground beef or turkey, breaking it up as it cooks. Season with chili powder, cumin, salt, and pepper. Once the meat is fully cooked, drain excess fat.

Layer everything in your slow cooker. Begin by spreading the refried beans in an even layer on the bottom. Next, add the seasoned meat-and-onion mixture. Follow with the can of diced tomatoes (liquid included) for juicy flavor. Sprinkle on the corn and black beans, then top with a generous layer of shredded cheese. Lastly, arrange the jalapeño slices on top (if you like a spicy kick!).
