  • 3 pounds russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter, divided
  • 1 cup milk or half-and-half (plus extra if needed)
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup chopped fresh chives (plus extra for garnish)

Instructions

1. Prepare and Load: Layer the potato chunks in your slow cooker, then sprinkle the garlic, salt, and pepper on top. Dot half the butter around the potatoes and pour in half the milk.

4. Keep Warm and Serve: Switch your slow cooker to the “keep warm” setting and cover until you’re ready to serve. Top with a sprinkling of extra chives or even some crispy bacon bits if you want to indulge in added texture.
