  • 3–4 lb beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 3 carrots, peeled and cut into chunks
  • 3 celery stalks, roughly chopped
  • 4 cloves garlic, minced

  • 1 teaspoon dried thyme
  • 1 cup beef stock or broth

In a large skillet or sauté pan, warm the olive oil over medium-high heat. Season the chuck roast generously with salt and pepper, then carefully place it in the hot skillet. Sear for a few minutes on each side, until the roast develops a rich, brown crust. This initial step helps lock in those mouthwatering flavors and sets the stage for a truly tender finish.
