Buying my slow cooker was by far one of the best investments I’ve made in my kitchen. 

Almost every week I use my crock pot to make one of these healthy slow cooker recipes! They are easy to make, healthy, and cheap–the perfect trifecta for meal prepping!

48 Cheap Healthy Slow Cooker Recipes

Who said healthy food can’t be affordable? I have a great collection of cheap crockpot recipes that cost less than $3 – and they are all prepared in a slow cooker. You can’t get any better than cheap, easy AND healthy! Here are a few of my favorite slow cooker recipes that are healthy and fit into my end-of-the-month budget.

1. Slow Cooker Carnitas and Rice (less than $1 per serving)

Pork is a go-to crockpot dish, and when you add a Mexican twist, you’ll end up with a meal everyone will want to try! This slow cooker carnitas and rice recipe is loaded with protein, good carbs, and flavors. Plus, it’s gluten-free. Top with your favorite salsa, and you’ll still keep it on the cheap side.
